Veggie Stir Fry


Veggie Stir Fry:

1 bag of tofu shirataki noodles
half a pound of pre-cooked shrimp
one bag of asian medley frozen veggies
4 cloves of garlic, chopped

Sauce:

2 tablespoons soy sauce
1/2 cup of water
Flour to thicken

Directions:

Cook the frozen veggies in a frying pan over medium heat
Add shrimp
Add garlic
Wash tofu noodles in a strainer, dry thoroughly, cut up and add to pan
Once everything in the pan is thoroughly heated add sauce
Keep over medium heat until sauce thickens

Black Bean Mushroom Quesadilla


Two La Tortilla Factory Flax & Fiber tortillas
1/4 Cup of Black Beans
1/4 cup of sautéed mushrooms
1/4 of low fat mexican cheese
1 tbsp of sour cream
1 tbsp of salsa

Nutrition Facts:

Sodium 291.7 mg
Carbs: 39.8 g
Protein: 15.4 g

Verdict: Yummy, but a little hard to eat. Maybe I need to add a bit more cheese?
