Lemon Garlic Tofu Noodles


Ingredients:

Fresh veggies
Garlic
Olive Oil
Lemon Juice
1 bag of tofu noodles
Parm cheese

Directions:

Chop garlic and place in pan with olive oil over low heat
Once simmering, add fresh veggies
While the veggies cook, rinse and dry tofu noodles
Cut noodles and add to veggies
Add lemon juice
Stir mixture until thoroughly heated
Place in bowls to serve and add park cheese as needed.

Easy Weekend Brunch--Veggie Egg Sandwiches

Directions:

Toast two pieces of bread
In a pan, spray pam and add veggies that you want
Once veggies are cooked, add two eggs and scramble.
Once the toast is done, place a slice of cheese on one half.
Top with egg scramble and cut in half.

Weekend brunch in ten minutes!

Avocado Mushroom cheese sliders


Ingredients:

Mushrooms
Avocado
Cheese
Two small rolls
butter

Directions:

Saute mushrooms in a pan over low heat with butter until browned
Cut the rolls in half and toast, butter each half
Slice avocado and cover the bottom half of each roll with slices
Place cooked mushrooms on top and cut with cheese

Tip: Add spices to the sautéed mushrooms to enhance flavor.
